Here at Crabby Bill’s Off The Hook, we carry the same values as our sister restaurant, The Original Crabby Bill’s in Indian Rocks Beach. That means providing our guests with fresh, high quality, and delicious seafood. One of our favorite dishes is our Chili Lime Sixty South Salmon. Sixty South is a premium salmon that has no added hormones, no antifouling chemicals, and is never treated with antibiotics. We’re not sure what we love more about this salmon - it’s fresh, delicious flavor or the fact that it is a sustainably farmed and environmentally conscious product. Sixty South has achieved a “Good Alternative” from Seafood Watch, the foremost consumer advocate on seafood sustainability founded by the Monterey Bay Aquarium. There are only a handful of other seafood producers in the world that carry this recognition.
Sixty South fits in the Crabby Bill’s Family Brand’s commitment to serve sustainable and domestic foods, whether it is our Rhode Island calamari, Alaskan crab, or Florida-farmed beef (and much more available!). As our Owner/Operator Matt Loder said in an interview with the Tampa Bay Times, “Sixty South may cost more, but it fills our commitment and it really does taste better.”. We care very much about providing our guests with fresh and delicious seafood. That means we don’t take shortcuts when it comes to sourcing the best products we can find. Three generations of working in the seafood industry have taught us that it’s about more than serving delicious food; we want to partner with suppliers who care about the quality of the seafood they provide and how their fishing effects the environment as much as we do.
For those that are health conscious or follow the seafood industry, you know that doctors and health professionals have long been encouraging people to add more salmon to their diet. Unfortunately, not all salmon is created equal. The majority of salmon comes from giant fish farms and have a number of issues (learn more here).
The more we learned, the more motivated we became to find a company that not only provided a higher quality salmon, but one that was better for the environment. Sixty South is the first and only producer of sustainable salmon raised in the freezing and isolated waters of the southernmost point of Chile. These pristine waters are so cold that parasites are unable thrive, meaning no pesticides are needed. The remote location also helps to ensure healthy aquaculture practices and a higher standard of sustainability. Sixty South is also ASC Certified, meaning their superior farming practices have been recognized by the Aquaculture Stewardship Council. Some might call the fishermen at Sixty South crazy - they face freezing temperatures, unpredictable weather, and 12-hour journeys to and from their farms. All of these factors show just how passionate Sixty South is about providing us with the best salmon possible and we are proud to be the first restaurant group to serve their salmon.
